Dining at high-end restaurants often evokes thoughts of precision, elegance, and lavish experiences. Recently, I had the opportunity to dine at the acclaimed Eleven Madison Park in New York City, renowned for its three Michelin Stars and considered one of the finest restaurants in the world. The experience was striking, as a waiter presented a dish of asparagus, intriguingly prepared in a pig’s bladder. While the dish was delicious, it was not enough to convince me to abandon my own cooking methods for such unconventional techniques.

Located at the foot of Madison Avenue, just across from the iconic Flatiron Building, Eleven Madison Park is a culinary destination frequented by celebrities, including Tom Brady and media mogul Rupert Murdoch. The restaurant’s reputation is built not only on its exquisite menu but also on its status as a symbol of elite dining. Over the years, I have sought out Michelin-starred establishments across the globe, from the bustling streets of Bilbao to the dim sum offerings of the world’s cheapest Michelin-starred restaurant in Hong Kong.

Dining at such prestigious venues has been less about sustenance and more about creating lasting memories. As the Michelin judges prepare to evaluate the restaurant scene in my home city, I hope they recognize the charm of our more casual dining culture. While we appreciate high quality, our culinary style tends to favour simplicity and community. We focus on fresh ingredients, well-prepared dishes, and an atmosphere that encourages sharing, rather than the intricate presentations often associated with fine dining.

Reflecting on my experiences, I realized that while the meal at Eleven Madison Park was extraordinary, the best dining experience of my life happened in a completely different setting. It took place in a modest and somewhat questionable apartment in Paris, where my best friend lived. After arriving in the city with another friend, we decided to explore the area with a jog along the Seine to shake off our jetlag.

On our way back, we stopped at a local farmers’ market and picked up some delightful ingredients: gooey cheese, vibrant tomatoes, rich salami, and fresh baguette. We returned to the apartment, sprawled on the floor, and savored these simple yet exquisite offerings. This experience stands out as a reminder that often, it is not the lavish settings or gourmet techniques that create the most memorable meals, but rather the company we keep.

Ultimately, the essence of a truly great meal lies in the connections we forge with others. Whether prepared with the utmost precision in a Michelin-starred restaurant or shared casually among friends, it is the joy of sharing food that makes dining delightful. The moments spent around the table, laughing and enjoying each other’s company, resonate far beyond the flavors on our plates.
